The value of the sausages market reinforced the upward trend of previous years in 2025, reaching €9.38 billion, up 6.7% on 2024. This performance was underpinned by stronger sales momentum and rising prices.

Although it is trending towards concentration, the sector structure is still marked by high fragmentation, reflecting the presence of numerous small local and regional producers. Market leaders are increasing investment in production capacity, automation and vertical integration.

Madrid, 10 March 2026.- According to INFORMA's (Cesce's subsidiary) DBK Sectoral Observatory—a leading provider of business, financial, sectoral, and marketing information in Spain and Portugal—the value of sausages sales in Spain maintained a sustained growth trajectory since the end of the pandemic. In 2025 it reached €9.38 billion, representing an increase of 6.7% year-over-year.
This market performance in value reflected stronger demand in volume, compared with the sluggishness of previous fiscal years, combined with a moderate upward trend in average selling prices.
The hospitality and restaurant channel is showing increasing dynamism, compared with the greater maturity seen in the food channel, as reflected in investments made by the main operators in new equipment and dedicated lines for horeca.
Within the food channel, branded offerings are gaining ground at the expense of private-label brands, supported by ongoing innovation in products with high meat content.
Foreign trade continues to trend upwards. The value of exports rose by nearly 5% in 2025, to €2.057 billion, resulting in an export propensity rate of 19%. Imports stood at €708 million, up 17%. Overall, EU countries accounted for around 68% of total export value.
Despite a progressive trend towards concentration, the sector's business structure remains marked by strong fragmentation, with over 3,800 meat and meat-products manufacturers or processors, poultry and game companies registered in early 2026. Numerous small local or regional producers compete alongside a small number of large food groups.
Strategies among leading operators include increased investment in production capacity and automation to respond to the rise of convenience formats, and the adoption of vertical integration processes and corporate restructuring to scale up and generate economies of scale.
