  • The value of the sausages market reinforced the upward trend of previous years in 2025, reaching €9.38 billion, up 6.7% from 2024. This performance was underpinned by stronger sales momentum and rising prices.

  • Although it is moving towards greater concentration, the sector's structure is still marked by high fragmentation, reflecting the presence of numerous small local and regional producers. Market leaders are increasing investment in production capacity, automation and vertical integration.

  • INFORMA's DBK Sectoral Observatory recently published these insights in the basic 'Sausages' Sectoral Report.

Madrid, 10 March 2026.- According to INFORMA's (Cesce's subsidiary) DBK Sectoral Observatory—a leading provider of business, financial, sectoral, and marketing information in Spain and Portugal—the value of sausages sales in Spain maintained a sustained growth trajectory since the end of the pandemic. In 2025, it reached €9.38 billion, an increase of 6.7% from the previous year.

This growth in market value reflected stronger demand in volume terms, compared with the sluggishness of previous fiscal years, combined with a moderate upward trend in average selling prices.

The hospitality and restaurant channel is showing increasing dynamism, compared with the greater maturity seen in the food retail channel. This is reflected in investment by leading operators in new equipment and dedicated lines for horeca.

Within the food retail channel, branded products gained ground at the expense of private label, supported by ongoing innovation in products with high meat content.

Foreign trade continued to trend upwards. The value of exports rose by nearly 5% in 2025, to €2.057 billion, resulting in an export propensity rate of 19%. Imports stood at €708 million, up 17%. Overall, EU countries accounted for around 68% of total export value.

Despite a gradual trend towards greater concentration, the sector's business structure remains marked by strong fragmentation, with over 3,800 companies manufacturing or processing meat and meat products, poultry and game registered in early 2026. Numerous small local or regional producers compete alongside a small number of large food groups.

Key strategies among leading operators include increased investment in production capacity and automation to meet the rise of convenience formats, and the adoption of vertical integration processes and corporate restructuring to scale up and generate economies of scale.
